dessert date night.

jae and i had tickets to go to the bee's game the other night. well it was a night that turned out to be super rainy monsoon weather. originally i was planning to take gracie with us, but then with the forecast, got jae's mom to babysit for us instead, but then when it was so crazy rainy, we didn't really want to go anyway. but we already had jae's mom to watch gracie, so we decided we'd still go do something. we had already eaten dinner so we couldn't go out to get food, so we decided some fancy desserts would be perfect.

(i literally tried to take a selfie of us like 4 times. this is what i got every single time..)




we ended our date night with a trip to home depot (naturally) and took turns drilling stuff. cuz what date is complete without that?

celebrating 4 years.

we celebrated our 4 year anniversary two months ago now....

since we had a 2.5 month old and not a lot of extra time to get away, i planned a stay-cation for us to celebrate this year.

we started it out with some five guys.


then we headed downtown SLC to the Grand America where we just hung out. no big plans (well, i did want to go swimming since it would be Gracie's first time at the pool, but turns out they charge an extra $10 just to go swimming.....i wasn't up for that, especially considering who knew with Gracie if we would be there for an hour or 5 minutes). we did stop at a couple shops in the hotel and got some chocolate covered strawberries and gelato. SO good.



we took Gracie with us for a few reasons, and i was glad we did. it didn't in any way make our celebrating not fun. i probably would've just been stressing over her and how she was if we had left her with someone. and besides, she's super cute so we just took lots of pictures of her :) (and none of us! haha)

this was just hilarious....she kept leaning too far over and then she'd just slowly slide til she fell all the way over on her side. she wouldn't cry or get upset - just look at me like 'uh....guys..'


she's been one of the best things about our life and our marriage so far, so why not celebrate with her, right?
oh - we did go to dinner too that night. olive garden. Gracie wasn't super happy during dinner, so it was short and sweet.

here's to the next 4 years, and the next 4 after that!

lemon bars.

a few weeks ago, i offered to bring a dessert for a family shindig. i wanted to try something new - not just the usual cookies or brownies or cake or whatever. and this spring weather made me think of lemon bars for some reason. i've never made lemon bars before, but i thought i'd find the easiest recipe i could fine (no joke) and go for it! Jae always wonders why i choose to try new recipes or make something i've never made before when it's for an event that a big group will be eating (i guess the guy has a point).....so i decided to do a trial run the day before and make sure they didn't suck :) they were delish! now to the recipe.

INGREDIENTS:
*1 package lemon cake mix
*1 egg
*1/2 cup vegetable oil
*1 8 ounce package cream cheese
*1/3 cup white sugar
*1 tablespoon lemon juice

DIRECTIONS:
  1. Preheat oven to 350 degrees F (175 degrees C). 
  2. Pour cake mix into a large bowl. Add the egg and oil; mix until well blended. Mixture will be slightly dry. Reserve one cup for the topping, and pat the rest into an ungreased 9x13 inch pan.
  3. Bake for 15 minutes in the preheated oven. Set aside to cool. Meanwhile, in a medium bowl, beat the cream cheese with the sugar and lemon juice until smooth. Spread the mixture evenly over the baked crust. Crumble the reserved cake mix mixture over the top.
  4. Bake for an additional 15 minutes in the preheated oven, or until filling is set and the topping is lightly toasted. Cool before cutting into bars. Refrigerate leftovers.

the recipe doesn't say to do this, but i've always envisioned lemon bars should have powdered sugar on top. so i added it!


they are so super crumbly and messy to eat, but SO good! 
worth the crumbs :)
